Cooking classes at luxury resorts

7 min read

Tortelli on Wednesday, gnocchi on Thursday, tagliatelle on Friday: at Villa d'Este the pasta class runs to a precise calendar, and four luxury resorts offer an afternoon that needs no golf bag.

A cooking class is the most sensible way to fill the afternoon after a round of golf or the morning of a rainy day: you stay at the hotel, learn something to take home and end up at the table. Not every luxury resort genuinely offers one, though: at these four, the school or the class exists, with a defined programme. The price has to be requested directly from the hotel.

The four hotels compared

Hotel Where What you learn When Who takes part
Villa d'Este Cernobbio, Lake Como One fresh pasta a day, paired with wine Wednesday, Thursday and Friday mornings, May to September Groups of 2 to 6 people
Castiglion del Bosco Montalcino, Tuscany Fresh pasta, pizza, pastry, vegetarian Tuscan cooking Every day, at 10 am and 4 pm (group lessons) Not specified
Masseria Torre Coccaro Fasano, Apulia Apulian dishes, homemade pasta, fish or meat, desserts, pizza and panzerotti Not specified Not specified; pizza and panzerotti are aimed at children
Golf Lodge (Andreus) San Leonardo in Passiria, South Tyrol Canederli (bread dumplings) and Kaiserschmarrn In the afternoon Hotel guests

Villa d'Este: fresh pasta at the Il Platano restaurant

The class is called The Art of Fresh Pasta and takes place at the Il Platano restaurant of Villa d'Este, on the shore of Lake Como. The programme published by the hotel is strict: a single variety of pasta per session, chosen according to the day. On Wednesday you make tortelli (filled pasta), on Thursday gnocchi, on Friday long pasta, meaning tagliolini, pappardelle and tagliatelle. The sauces and the ravioli fillings change every week.

The class is for groups of 2 to 6 people, three mornings a week from May to September. During the experience guests drink an André Clouet Silver Brut Nature and taste a dish prepared with the pasta they have made themselves; lunch also includes the house aubergine parmigiana and a selection of dry pastries. The hotel's policy allows free cancellation up to 24 hours before; after that, or in case of a no-show, 100% of the cost is charged.

For golfers the formula works well: the class takes up the morning, and the Montorfano club is about 14 kilometres away. It is the Circolo Golf Villa d'Este, an 18-hole par 69 designed by Peter Gannon in 1926, owned by the hotel since 2024.

Castiglion del Bosco: La Canonica Cooking School

In the medieval village of Castiglion del Bosco, the Rosewood of Montalcino, the school is called La Canonica Cooking School and stands next to the Osteria La Canonica. According to the hotel, you start in the organic vegetable garden, with Tuscan vegetables and herbs, before moving to the school's interactive kitchen. Four classes are listed: La Pasta Fresca, Pizza Experience, Pastry and Vegetarian Tuscany. The group lessons take place every day at 10 am and 4 pm.

On the same estate the restaurant Campo del Drago has two Michelin stars, with chef Matteo Temperini. For golf there is one peculiarity to know before booking: the Castiglion del Bosco course, 18 holes by Tom Weiskopf and Phil Smith, is a private club, open on request or to Rosewood guests. Those who want to play it say so when booking.

Masseria Torre Coccaro: in the cave, with the sixteenth-century oven

At Masseria Torre Coccaro, in Savelletri di Fasano, the Cooking School occupies an ancient natural cave. The official page lists typical Apulian dishes, homemade pasta, fish or meat and desserts; the sixteenth-century wood-fired oven is used for pizza and panzerotti, which the masseria names as the children's favourites. After the lesson, lunch is served under a pergola with a vine that, according to the masseria, is over 600 years old, with a view over the countryside.

For duration, prices and days it is best to write to or phone the masseria before leaving. For golf there is the resident executive nine-hole course, the Coccaro Golf Club, a par 27 of 1,150 metres 400 metres from the masseria, and the San Domenico Golf, 18 holes about 1 kilometre away, which however accepts outside players only at certain times.

Golf Lodge: canederli and Kaiserschmarrn in South Tyrol

The Golf Lodge in San Leonardo in Passiria is the only one of the four that is adults-only. The programme is simpler than the others: in the afternoon, the hotel writes, the cooking classes teach the tricks behind South Tyrolean dishes such as Kaiserschmarrn and canederli. It works in tandem with the Outdoor Kitchen, where the chefs prepare a first course in front of the guests, and with the Chef's Table in the kitchen, which can be booked for a supplement.

The hotel stands directly on the 18-hole layout of the Golf Club Passeier.Meran, a par 71 of 5,791 metres. The class calendar has to be requested from the hotel.

How to choose and how to book

  • Looking for regularity? Castiglion del Bosco is the only one of the four to publish a daily schedule.
  • Want a specific theme? Villa d'Este fixes the pasta of the day: choose the day according to what you want to learn.
  • Travelling with children? Torre Coccaro is the only one of the four to explicitly mention pizza and panzerotti for the little ones. The Golf Lodge is adults-only.
  • No golf bag? None of the classes requires you to play: they are hotel activities, not club ones.

In every case, book before you leave: the groups are small (Villa d'Este stops at six people) and the class season can be limited, as in Como from May to September. Dates, prices and availability must be confirmed with the hotel for your date.

Curiosities

  • One pasta at a time. At Villa d'Este the class does not teach "pasta" in general: each day of the week has a single shape.
  • A school in a cave. The Torre Coccaro school is carved, according to the masseria, out of a natural cave.
  • One hole more. At Castiglion del Bosco, after the eighteenth, the course has the Brunello Hole, a par 3 with a magnum of Brunello as the prize: a tradition that pairs well with a day of food and wine.
